Go at the awkward hours

Ten thirty in the morning and three in the afternoon are when a cafe shows its real character, unhurried and un-queued. Nine and one o'clock tell you nothing except that people need caffeine and lunch.

Ask the person, not the app

Review apps optimise for volume, which is why they keep sending you to the busy square. The person at your guesthouse, the one selling you a train ticket, the bookshop clerk — ask any of them where they get their coffee and you'll do better than five stars ever managed.

None of this is complicated. It just requires walking a little further than the map wants you to, and trusting that the quiet street usually has the better table.
